Ingredients

Serves: 4

• 4 spatchcocks
• 8 cloves garlic
• 5cm piece ginger
• 5cm piece galangal, peeled
• 2 stalks lemongrass, sliced
• 2 small red chillies
• 12 macadamia nuts
• 1 Tbsp ground turmeric
• 1 tsp ground coriander seed
• ½ tsp ground nutmeg
• ½ tsp ground cumin
• 1 Tbsp shrimp paste
• 1 Tbsp sesame oil
• juice of 2 limes sea salt flakes and freshly-ground black pepper
• ½ head green cabbage, finely sliced
• 2 Tbsp extra virgin olive oil
• 2 brown onions, finely sliced
• lime leaves, toasted coconut, coconut rice, sambal, lime wedges and fried shallots, to serve

AYAM BETUTU (BALINESE STYLE ROAST SPATCHCOCKS)

Directions:

1. Preheat oven to 160°C. Pat the spatchcocks dry inside and out with kitchen paper. Combine the garlic, ginger, galangal, lemongrass, chillies, macadamias, spices, shrimp paste, sesame oil and lime juice in a food processor and purée until very smooth. Season with a little salt and a generous amount of pepper.

2. Rub half the spice paste onto the spatchcocks, then set aside. Fry the remaining mixture in the olive oil until aromatic, then add the cabbage and sauté until wilted. Add ½ cup water, then cook until the mixture is dry. Allow to cool slightly, then stuff into the spatchcocks.

3. Arrange the onions in the bottom of a 28cm baking dish, then put the spatchcocks on top. Cover with foil, then bake for 25 minutes. Increase the heat to 220°C, remove the foil, and bake for a further 15 minutes, until well-browned. Scatter with sliced lime leaves and toasted coconut, then serve with coconut rice, sambal, limes and fried shallots.
